Health Benefits of Coconut Palm Sugar

I'm very happy to let you know about the health benefits of coconut palm sugar, thanks to a question Sonia, one of our readers sent to us.

Well, I've to tell you that, as we speak, you could find in my pantry two bags of coconut palm sugar. Coconut palm sugar not only is a healthy alternative that people with low thyroid function, like Sonia, can use… anyone could benefit from it – unless the person has a special sensitivity.

Coconut sugar is extracted from the budding flowers of the palm tree. How? By chopping the flowers and collecting the sap that comes out. Then it's boiled and dried. As you can see it undergoes very little processing and the best of all is that it has the texture similar to table sugar BUT with a much lower glycemic index… Table sugar has a glycemic index of 65 whereas the GI of coconut palm sugar is just 35!

This is great news because this means that it doesn't cause rapid blood sugar spikes. Not only that… Coconut sugar has many nutrients including iron, zinc and vitamins B1, B2, B3, B6, inositol and potassium. These nutrients support the health of the thyroid gland, nervous system, muscles, skin, hair, and eyes, and digestive system to name a few.

This very special sugar has been used for centuries in South and Southeast Asia. It tastes pretty much like sugar and can be used in drinks, cooking and best of all, in baking – using the same measurements as regular sugar.
